WHAT IS GLUTEN?
Gluten is a name for certain storage proteins found in grains like wheat, barley, and rye.
Grains that include gluten are:
● Rye
● Barley
● Triticale
● Malt
● Brewer’s Yeast
● Wheat starch
● Spelt
● Kamut
● Wheat berries
● Couscous
* Wheat
Grains that do not include gluten are:
● Sorghum
● Quinoa
● Oats
● Buckwheat
● Amaranth
● Teff
● Corn
● Rice
● Millet
Simply put, going “gluten-free” means actively trying to avoid eating gluten.
According to the Gluten Intolerance Group, there are currently no supplements or
medications that neutralize gluten.
Celiac disease is one of the main reasons that people eliminate gluten from their diet. But what is celiac disease and why is it triggered by gluten?
When people with celiac disease eat gluten, the body launches an immune response in the small intestine.
Since there is no formal test for NCGS, it is more difficult to get a proper
diagnosis. This can be a long and frustrating process for people who have ongoing symptoms but aren’t sure of the cause.
Completely removing gluten from your diet is certainly challenging and can be frustrating at times.
How you deal with your gluten-free diet and going to a friend’s or family
is somewhat dependent on your relationship with them and your personality.
Eating at a restaurant and finding a gluten-free option is a lot easier
than it used to be, but it’s still not a totally easy process.
When you call to ask about the menu, ask a few questions to find out if they
know about cross-contact and how they can avoid accidentally giving someone gluten.
Gluten-free living can feel like a trial, and there are certainly a fair number of inconveniences and disappointments, but it doesn’t mean you can’t enjoy life
or eating.
